Quick and Easy Tofu, Tempeh, Vegetable Stir Fry
The time between Thanksgiving and the New Year is filled with celebrations that can leave you feeling not-so-festive. Try this quick, easy and super flavorful vegetarian/vegan stir-fry to keep you feeling festive and energized!
TOFU, TEMPEH, VEGETABLE STIR FRY
Prep your vegetables, wash, peel, chop into similar sized bits. Use up anything you’ve got sitting in your vegetable drawer like carrots, celery, onion, peppers. Leeks are in season now and add a really nice subtle allium flavor.
Prep your tofu, pat it dry with a paper towel, press hard, then cut it into shapes, I like triangles.
Coat your fry pan with sesame oil and get the pan ripping hot. Sesame oil is key, it adds a nutty flavor and has a high smoke point so you can keep your heat very high without burning your food. Add your tofu shapes and let them sear to a golden brown, then set aside on a paper towel lined plate.
Add your chopped vegetables and broken up tempeh to your hot pan. Add some soy sauce, more sesame oil, and season to your tastes by adding a dash chili paste, fish sauce, or mirin.
Let everyone get to know each other in the pan, and when the vegetables are tender you’re ready to plate and top with your tofu.
